What it is
Classic Latvian-style tushenka from Nakotne, a long-standing meat cannery in Jelgava region. Chunks of beef are slow-cooked in a sealed tin with their own fat, a little water and a whisper of bay and pepper, then sterilised so the meat keeps for years in the cupboard. The result is a soft, savoury, fork-tender braise sitting in a layer of pale, set jelly — just warm it and it melts back into rich gravy.
The 200 g format is a perfect single portion: empty the tin into a hot pan with boiled potatoes, buckwheat or pasta and stir for two minutes; or spread on dark rye with mustard and a pickled cucumber for a proper road-trip lunch. It is also a campfire and dacha staple — the tin needs no fridge until it is opened.
