What it is
Bočių — "ancestors" in Lithuanian — is one of the most popular dark loaves at Lasuduona. Built on rye flour with wheat in support, sweetened gently with rye malt, lifted with caraway. The crumb is moist, slightly sticky, deeply savoury; the crust is firm and dark.
Slice thin and butter it for sprats or smoked fish, lay it under herring with onion, or toast a slice and run a raw garlic clove over the surface for chesnoki — the Baltic snack.
Ingredients
Rye flour 54%, wheat flour 46%, water, rye malt, sugar, yeast, salt, caraway seeds.
