What it is
Solyanka is one of the great comfort soups of Eastern European cooking. This vegetable version from Latvian producer Leis uses fresh white cabbage rather than the pickled variety, giving the soup a clean, mild character that is lighter and more versatile than the sharper sauerkraut-based solyanka. The mushrooms add an earthy depth, and a gentle tomato sauce ties everything together.
Heat straight from the jar and serve as is, or use as a flavoursome base: add a ladle of stock, a knob of butter, or a spoonful of sour cream to taste. Goes well with rye bread.
