What it is
Spilva's canned sorrel is made from Latvian-grown sorrel leaves, minced and preserved with salt alone — no acids, no stabilisers, no preservatives. The jar is pasteurised at home-kitchen temperatures to keep the leaves' sharp, tart character intact. Spilva has been producing preserved vegetables in Riga since the late nineteenth century; this sorrel is one of their most-loved staples.
Tip the jar straight into a pot of chicken or vegetable broth with boiled potatoes and hard-boiled egg for the classic Latvian and Eastern European sorrel soup — done in minutes. It also works stirred into mashed potato, folded into omelettes, or mixed into a sour-cream sauce for fish.
