What it is
Moskovskaya Polukopchenaya is a semi-smoked sausage in the grand tradition of Eastern European cold cuts. The loaves are first gently cooked, then cold-smoked over alder wood — a two-stage process that gives the sausage its deep-red rind, firm-but-yielding texture, and rich layered flavour.
Germes has been producing it in Latvia to a closely held recipe: coarse-ground pork and beef with visible chunks of backfat, seasoned with garlic, black pepper, and coriander. Cut it thin for a cold-cuts board with rye bread and sharp mustard; slice it thicker and it holds up well in a hot pan.
