What it is
Kiaulienos Kumpis is a whole pork ham, smoked over natural wood until the surface turns deep mahogany and the fat cap sets firm. Petro Mėsinė is a Lithuanian artisan butchery that follows traditional curing and smoking methods with minimal additives — pork, salt, spices, and smoke. Nothing more.
The lard layer is preserved intentionally: it bastes the meat during smoking and keeps it moist in storage. Slice it thin across the grain to reveal the contrast of rosy lean muscle against pale, flavourful fat — a classic Eastern European charcuterie cut.
Serve at room temperature, sliced thin across the grain. Pairs with dark rye bread, grainy mustard, and pickled cucumbers. Excellent alongside a cold lager or rye spirit.
Store refrigerated at 0–6 °C. Once opened, consume within 3–4 days.
