What it is
Chicken thighs are the upper part of the leg — on the bone, with the skin on. The dark meat is naturally richer and juicier than breast, and it holds smoke beautifully. Nakotne brines the thighs lightly, then hot-smokes them over natural hardwood until the skin is deep amber and the meat is cooked through to the bone — tender, aromatic and ready to eat straight from the pack.
Nakotne (Nākotne) is a Latvian poultry specialist based near Jelgava, repeatedly named Product of the Year by the Latvian Traders Association. Eat the thighs cold with rye bread and mustard, warm them through in the oven, or pull the meat off the bone for salads, sandwiches, pies, pancakes and soljanka — the smoky depth lifts everything it touches.
