What it is
Chicken leg quarters are the full hindquarter of the bird — thigh and drumstick together, on the bone, with the skin on. Nakotne brines them lightly, then hot-smokes them over natural hardwood until the skin is deep amber and the meat is fully cooked, tender and aromatic right through to the bone.
Nakotne (Nākotne) is a Latvian poultry specialist based near Jelgava, repeatedly named Product of the Year by the Latvian Traders Association. Eat the quarters straight from the pack at room temperature, warm them through in the oven for a few minutes, or pull the meat off the bone for salads, sandwiches, pasta and soljanka.
