Holandes — Latvian for “Dutch” — is a classic semi-hard cheese made from pasteurised cow’s milk. Smiltenes Piens has been crafting dairy in Smiltene, northern Latvia, since 1926. At 45% fat in dry matter, this Holandes is supple and sliceable with a clean, buttery flavour and a mild tang. It melts evenly and suits both the cheese board and hot dishes.
