What it is
Yachnevaya krupa — “yachka” — is barley cut into fine grits rather than rolled or pearled. Skviryanka mills it without polishing, so the grain keeps its fibre and its gentle, nutty flavour. The mill in Skvyra, Kyiv region, has been working grain since 1931.
Because the grits are small, yachka cooks much faster than pearl barley. Make it into a soft breakfast porridge with butter or milk, or serve it as a side the way you would buckwheat — it is very good with fried onions, mushrooms or a rich goulash.
How to cook
Rinse the grits and pour them into boiling salted water — 1 part grits to 2.5 parts water. Simmer gently for about 5 minutes, then take the pan off the heat and let it stand, covered, for another 5–10 minutes. Finish with a knob of butter.
