What it is
Chicken Tabaka is a Georgian classic — a whole small bird pressed flat under a heavy weight and fried until the skin is deep golden and crackling. This ready-mixed seasoning takes the guesswork out of the spice blend: garlic, paprika, coriander and warm herbs in a balanced 25 g sachet. Rub it all over the bird, leave to rest for 30 minutes, then fry under a press on a high heat.
