What it is
Savory (Satureja) is a boldly aromatic herb with a warm, slightly peppery character — sharper than thyme, more complex than oregano. In Bulgarian cuisine it is called chubritsa and seasons nearly every savoury dish; across Eastern European cooking it adds depth to bean soups, meat stews, and grilled dishes. This dried, crumbled form delivers concentrated flavour: a small pinch is enough to lift a whole pot.
Add to bean soups, lentil stews, braised lamb or pork, and vegetable broths. Rub onto meat before grilling, stir into marinades, or blend with salt and garlic as a dry rub. Pairs especially well with pulses and root vegetables.
