What it is
Salo is pork back fat and belly cured the Ukrainian way: generously rubbed with salt, crushed garlic, black pepper and bay leaf, then rested until the flavour deepens into something clean and distinctly savoury. The result is a firm, pale fat with a thin rind, best enjoyed thinly sliced on dark rye bread.
Slice paper-thin and serve on rye or sourdough with pickled gherkins and a spring onion on the side. Equally good diced small and rendered into soups, potato dishes or scrambled eggs for depth and richness.
