What it is
Germes' Nastoyashee (“Authentic”) line is their straightforward, no-shortcuts cure: a clean slab of pork backfat dry-salted for several days, then cold-smoked over hardwood until the rind takes a deep amber colour and the smoke flavour runs all the way through.
Germes is a long-standing Lithuanian meat producer (UK shelves also list them under “3 Little Pigs”) with a reputation for clean recipes. Slice paper-thin against the grain. Excellent on dark rye with mustard, with onion and pickles, or chopped fine into hot borshch.
