What it is
These fruit rusks are twice-baked from a lightly sweetened wheat dough enriched with dried fruit — most commonly raisins. The double baking drives out nearly all moisture, giving each piece its characteristic snap and very long shelf life. Light enough to eat by the handful, satisfying enough to accompany a proper mug of tea or coffee.
