What it is
A sliceable roasted meatloaf in the Eastern-European myasnoj rulet tradition — the kind that lives behind the glass of every neighbourhood deli counter from Riga to Minsk. Coarsely ground pork and beef are seasoned with garlic, black pepper and a measured pinch of salt, bound with a little egg and breadcrumb, then shaped into a loaf and oven-roasted until the outside takes on a deep, glossy crust and the inside stays moist and tender.
It comes ready to eat. Slice it cold and thin for an open sandwich on dark rye with mustard and a pickled cucumber; warm a few slices in a pan to crisp the edges; or dice it into a quick supper with fried potatoes, sauerkraut, or buckwheat. Honest, savoury, no-nonsense meat.
