What it is
Skilandinė Dešra is a traditional Lithuanian dry-cured smoked sausage made in the style of skilandis — the centuries-old farmhouse cured meat of the Baltic countryside. Coarsely chopped pork and beef are seasoned with salt, black pepper and a firm hand of garlic, stuffed into natural casing, then slowly cold-smoked over hardwood and air-dried until the meat is firm and the flavour deeply concentrated. The slice is dense and marbled, dark ruby in colour, with visible flecks of pure white fat that turn translucent at room temperature.
Produced by Rokiškio Mėsinė (RM), one of the most respected meat houses in northern Lithuania. Cut on the bias into thin slices and let it sit a few minutes out of the fridge to release the aroma. Serve with dark rye bread, sharp mustard, pickled gherkins, a slab of farmhouse cheese, or a cold lager — this is sausage to nibble slowly with company, not to rush through.
