What it is
A cold-smoked, dry-cured salami in the Lithuanian first-class tradition, produced by Rokiškio mėsinė (the RM brand). Pork, beef and lard are coarsely ground, seasoned and slowly fermented, then cold-smoked and matured until the casing firms and the slice darkens to a deep, even red.
What sets this one apart is the spicing — ground nutmeg flowers give a fragrant top note and a soft rum aroma rounds the finish, so the salami stays savoury and balanced rather than sweet. The result is a clean, lightly fatty bite with a long, warm aftertaste.
Ingredients
Pork, beef, pork lard, salt, spices (black and white pepper, ground nutmeg flowers), rum-aroma flavouring, dextrose, antioxidant (sodium ascorbate, E301), preservative (sodium nitrite, E250). Stuffed in natural casing; surface may carry a light edible mould bloom typical of dry salami.
