"Mele Zeleja" from Latvian producer Nakotne is thin, neat slices of cooked pork tongue suspended in a clear, savoury meat jelly lifted by bay and a touch of garlic. Pork tongue is a traditional festive cut: a firm yet surprisingly tender bite, with a mild, faintly sweet meaty flavour and none of the gristle home cooks have to trim away.
