What it is
This 400g tin holds large, recognisable pieces of pork stewed slowly in their own juices — the krupnokuskovaya (large-chunk) grade of tushenka, prized for showing whole muscle fibres rather than a paste of trimmings. Open the can and you should see firm cubes of lean meat suspended in a layer of cooled, set jelly, with a thin cap of natural pork fat on top that softens the moment it meets heat.
Tushenka is one of the great pantry workhorses of the Russian and Soviet kitchen: pre-cooked, shelf-stable, ready to turn into a meal in five minutes. Tip it onto a hot pan with onion and let the jelly melt into gravy, then stir into buckwheat (grechka), boiled potatoes, pasta, rice or fresh-cooked macaroni po-flotski.
