What it is
Ardealul Piquant pork pate (Pateu de Porc Picant) is a classic Romanian deli spread from the Transylvanian highlands, where the cannery of the same name has been turning out tinned pates for generations. Pork, pork liver and a little fat are gently cooked with onion and salt, then lifted with paprika and a measured pinch of chili so the finish carries a soft, warming heat rather than a sharp burn. The 200 g tin keeps the spread fresh on the shelf and ready whenever you fancy something quick and savoury.
Texture is smooth and easy to spread, colour a warm rusty pink, aroma gently smoky and peppery. Open the tin, scrape it into a bowl or work straight from the lid; pile thickly on rye, baguette or warm flatbread with a few rings of red onion, sliced gherkin or a streak of mustard. It also fills a lunchtime sandwich, tops a cracker as a fast appetiser with cold beer, or stirs into hot mashed potato for a comforting Transylvanian supper.
