What it is
Rokiškio Mėsinė is a meat house from the small town of Rokiškis in north-eastern Lithuania, and this ham is built the way they have always done it: a whole muscle of pork ham, cured with salt, hand-tied inside a cotton net and patiently cold-smoked over hardwood. The seasoning is the old-fashioned village pair — black pepper and garlic. Sliced thin, the meat is firm and lean with a deep rosy colour and a calm, restrained woodsmoke aroma rather than a heavy smoky punch. Lay it on dark rye with mustard, eat it next to boiled potatoes and dill, or build a simple board with cheese, gherkins and a glass of beer. Honest Baltic country flavour.
