What it is
A cold-cut speciality from Rokiškio Mėsinė of north-east Lithuania: pieces of cooked pork tongue and trimmed pork ear are layered, lightly cured and pressed inside a casing, then set with their own savoury, gelatinous jelly until the loaf slices cleanly. The cross-section shows a mosaic of soft rosy tongue and translucent ear cartilage bound by amber aspic — a traditional Baltic deli classic that feels right at home next to brawn, headcheese (zelc) and other holodets-style snacks.
Best served chilled, sliced thinly, with rye bread, sharp mustard, fresh horseradish or a splash of vinegar and a chopped onion. A natural fit for the zakuski board alongside pickles, marinated mushrooms and a measure of something cold and clear.
