What it is
Plov is the cornerstone of Central Asian cooking — a fragrant rice pilaf built low and slow in a heavy kazan pot until every grain absorbs the richness of lamb fat and spice-infused stock. The technique has remained unchanged across centuries of Uzbek, Tajik and Kazakh kitchens.
Our version starts with bone-in lamb pieces seared golden with onion and carrot, then layered under long-grain rice to steam together until the rice soaks up every drop of the cooking juices.
