What it is
These are classic Eastern European bliny — paper-thin wheat pancakes wrapped around a filling of minced beef and pork, seasoned with onion and aromatic herbs. A staple of Russian and Ukrainian home cooking, they are as satisfying for a quick weekday lunch as for a relaxed weekend brunch. Each portion contains 4 rolled pancakes, made fresh in our kitchen.
Heat in a frying pan over medium heat for 3–4 minutes per side, or in a microwave covered for 2 minutes. Serve with soured cream or alongside a fresh salad. For a richer finish, pan-fry in a little butter until the edges are crisp and golden.
