What it is
Rassolnik is one of the defining soups of Eastern European cooking. Its characteristic depth comes from pickled cucumbers and their brine — sharp, savoury, and warming. Nezhin, Ukraine’s renowned canning producer from the city of Nizhyn, Chernihiv Oblast, has been preserving regional food traditions for generations.
