What it is
The city of Nizhyn in northern Ukraine has been celebrated for its pickled vegetables for three centuries, with harvests drawn from fertile Chernihiv soils and spring water that local producers have long prized. This jar brings those same traditions to your table: plump yellow tomatoes, hand-selected at peak ripeness, marinated in a clean brine of water, salt, sugar, acetic acid, and a measured blend of dill, horseradish, parsley, black pepper, bay leaf, and allspice.
Yellow tomatoes have a naturally lower acidity than red, which gives the marinade a gentler, sweeter finish. They hold their shape well through pasteurisation, arriving firm enough to eat whole, slice over a salted platter, or pile onto dark rye bread.
Serve straight from the jar as part of a cold spread, alongside smoked meats and pickled cucumbers. The brine is pleasantly seasoned and works well in a vinaigrette or as a light soup base.
Nestle alongside rye bread and a board of cold cuts for an authentic Eastern European spread.
