About this product
Shiitake bring a richer, denser, almost meaty texture than European forest mushrooms. Married to a Ural-style marinade — heavy on garlic, dill and a backbone of clove — they sit somewhere unexpected and very pleasing: an Asian cap wearing a Russian coat.
Drain and serve as a cold zakuska with rye bread, smoked fish or boiled potatoes; slice and fold into a winter salad; or warm briefly and lift onto a buttered toast. Their firm structure means they hold up to chopping for vinaigrettes without going to mush.
