About this product
Black milk mushrooms — chernye gruzdi — are the dark olive-brown cousins of the white gruzd. Their flesh is denser, their flavour earthier and more savoury, and they hold a salt cure better than almost any wild mushroom. The salted black gruzd is one of the rarest, most distinctly Russian zakuska on the table.
No vinegar here — the mushrooms are salt-cured with garlic, dill, blackcurrant leaves and a little black pepper, exactly as country households have done for generations. Drain, dress generously with sunflower oil and finely sliced onion, and serve with boiled potatoes, dark rye and sour cream.
