Savory (chaber) is a pungent herb with a clean peppery warmth, known in Georgian as kondari — one of the pillars of the Caucasian spice tradition. Dried and finely ground, it blends effortlessly into dishes without overpowering the other flavours.
Rub into lamb or pork before roasting; stir into lobiani (Georgian bean bread) filling; add a pinch to kidney bean stew or grilled chicken. An essential component of the khmeli-suneli spice blend that underpins much of Georgian cooking. Works equally well in walnut sauces and meat marinades.
