What it is
Kabachkovaya Ikra — literally «marrow caviar» — is one of the most cherished preserved spreads across the former Soviet space. Soft-cooked marrow (courgette) is blended with onion, carrot, tomato paste and sunflower oil into a smooth, gently sweet-savoury paste with a silky texture. Spread it on rye or wholemeal bread, dollop it alongside boiled potatoes, or spoon it into buckwheat blinis.
