What it is
Kabachkovaya ikra — marrow caviar — is one of those quiet staples that ended up in every Eastern European cupboard. Zucchini is slow-cooked with onion, carrot and tomato paste until everything collapses into a smooth, slightly sweet spread.
Spread it thickly on rye bread, serve it next to mashed potatoes and a fried egg, or stir a spoonful into a hot pasta sauce. Eaten straight from the jar with a teaspoon is a long Soviet tradition we won't argue with.
