What it is
A whole Atlantic mackerel, trimmed, seasoned, and shaped into a tight roll before going into the smokehouse. Hot smoking at 80–120 °C cooks the fish through while wrapping it in a deep amber colour and a rich, savoury smoke aroma.
Mackerel is a naturally oily, full-flavoured fish. The roll format keeps every layer moist and makes it easy to slice or pull apart to serve. Excellent with rye bread, pickled cucumber, or alongside potato dishes.
