What it is
A traditional canned liver pate in the homestyle Eastern European mould: pork (or pork and beef) liver gently cooked with pork fat and onion, finely ground into a soft, mousse-like spread, then sealed in a 300g tin. Open it, lift the lid, and scoop straight onto a slab of buttered rye; spread thicker on fresh white bread with a slice of pickle and a curl of red onion; or warm a spoonful into pasta for a quick, savoury sauce. It is the kind of tin that sits patiently in the cupboard for months and then quietly carries breakfast, road trips, lunchboxes and a late, hungry midnight.
Ingredients
Pork liver, pork fat, water, onion, salt, spices (white pepper, allspice, nutmeg), antioxidant (sodium ascorbate, E301), preservative (sodium nitrite, E250). Some recipes also include a small amount of beef liver, milk powder or wheat flour as a binder.
