What it is
Doktora desa — "doctor’s sausage" — was created in 1936 as a soft, easily digestible meat product for sanatorium diets. It became one of the defining tastes of the Soviet Union and stayed in Latvian kitchens long after. Nākotne’s version is the everyday Baltic standard: pork-based, smooth-textured, gently spiced.
Slice it thin onto rye bread with butter, lay it on top of boiled potatoes with mustard, or fold it into a school-style sandwich with cheese and pickled cucumber.
