What it is

A Latvian-made semi-hard cow’s milk cheese in the traditional Ligo style — firm but cuttable, with a mild, lightly nutty flavour and a clean dairy finish. Pale ivory inside, with the rounded shape of an old-world dairy classic.

Slice for breakfast cheese boards, melt into a toasted sandwich, or grate over hot potatoes. Holds its own next to dark rye and a slice of tomato.

Ingredients

Pasteurised cow’s milk, salt, microbial rennet, starter cultures, calcium chloride. Rind may be coated (non-edible).
