What they are

Maigums means "tenderness" in Latvian, and it is Laima's name for its zefir: a light, airy marshmallow whipped from apple purée and egg white. In this Christmas edition each zefir has a cherry jelly centre flavoured with Riga Black Balsam Cherry, the cherry version of Latvia's famous herbal liqueur. It is then coated in dark chocolate with at least 52% cocoa.

The texture is soft and melting, and the cherry centre balances the sweetness of the zefir with a gentle tartness. Serve them with black tea or coffee after a festive meal, or give the box as a small Christmas gift. The amount of balsam is tiny (0.05%), so it is there for flavour rather than strength.

Store in a cool, dry place away from direct sunlight and strong smells. Once opened, keep the box closed so the zefir stays soft.
