What it is
Lackmann's Korejka s Chesnokom — "loin with garlic" — is a whole muscle of pork loin cured in a brine of garlic and spices, then cooked through in a hot smokehouse. On the slice you see dense, rose‑pink meat trimmed with a thin ribbon of fat along one edge; on the nose, a gentle warmth of garlic and woodsmoke, never harsh. The texture is more tender than bacon and firmer than ordinary cooked ham — thin slices hold their shape on bread yet melt cleanly on the tongue.
Lackmann is a German meat manufacturer that has been making traditional Eastern‑European deli specialities for the Russian‑speaking diaspora across Europe for decades — loins, briskets, Krakauer, salamis, all to the recipes people remember from home. This garlic‑cured smoked loin is one of their signatures: a familiar, comforting flavour.
Slice thinly onto dark rye with butter, mustard and a pickled cucumber; fold into omelettes, potato bakes, pea soup or borscht — a couple of slices is all it takes to add a smoky, meaty backbone. It is also a natural partner to a cold beer or a chilled shot of vodka.
