What it is
Klaipedos Mesine’s hot smoked saveloy is a classic Lithuanian servelatas — the deli-counter cooked sausage that anyone who has shopped in Klaipeda, Vilnius or Kaunas will recognise on sight. Pork and beef are finely emulsified with salt, garlic and a quiet hand of pepper and other spices, packed into a smooth casing, and then hot-smoked over alder wood until the outside takes on the deep amber blush that gives the style its name.
The texture is fine and springy rather than coarse, the smoke present but rounded, the seasoning savoury and clean. Slice it thin onto rye for an open sandwich with mustard and a pickled cucumber, fan a few rounds across a board of cheese and tomato for breakfast, or warm it briefly with fried potatoes and a fried egg for a proper Baltic supper.
