What it is
"Tea sausage" — chajnaja desa — is the everyday boiled sausage of the Baltic and Soviet table, a step simpler than Doctor’s: softer, even more mildly spiced, made for slicing thinly onto bread alongside a cup of tea. Nākotne is Latvia’s long-running specialist producer.
Slice cold onto rye bread with butter and a pickled cucumber, fry slices briefly and tuck into a fried-egg sandwich, or chop into a Baltic-style salad with potato, gherkin and dill.
