What it is
Khmeli-suneli — Georgian for “dried herbs” — is the cornerstone spice blend of the Caucasian kitchen. What sets it apart from any other world spice mix is utskho suneli, the blue fenugreek native to Georgia: it lends the blend a warm, faintly bitter depth that no substitute can replicate.
Layered with coriander, dill, basil, savory, parsley, mint and marigold, the blend blooms in hot oil or braising liquid, releasing a complex fragrance that is at once earthy and floral. A single teaspoon does the work of half a herb rack.
Essential in kharcho (walnut beef soup), chakhokhbili (braised chicken), satsivi (cold walnut sauce), lobiani (bean-filled bread) and ajapsandali (vegetable stew). Use in marinades for grilled meats, stir into yogurt dips, or rub onto fish before roasting. 1–2 tsp per serving.
