What it is
Rankas «Kēlmēni» — a heavy, unsifted Latvian rye made from coarse-ground rye flour, sourdough-fermented over many hours. Dense, moist, dark, slightly sweet from long fermentation. A loaf you can rest a knife on.
Slice thinly for smoked fish or salt-cured herring, with a smear of butter and slivered onion, or with a wedge of sharp cheese. Toasts beautifully on the third day.
