What it is

Imam Bayildi — the name means “the imam fainted” in Turkish, supposedly from sheer delight at the dish — is a classic of the Eastern Mediterranean table: aubergine slow-cooked until silky with tomatoes, onion, garlic, and sweet pepper in sunflower oil. This canned version adds chickpeas for extra body and protein, making it a satisfying ready-to-heat side dish or light main.
