What it is
Servelat is a classic of Eastern European charcuterie — a finely emulsified pork-and-beef sausage, mildly spiced and gently hot-smoked. Biovela's "Vilnius" variety carries the highest-grade designation, indicating a high proportion of lean meat, a smooth and consistent texture, and a restrained smoky flavour.
