What it is
Escolar (Lepidocybium flavobrunneum) is a sleek, deep-ocean fish prized for its unusually rich, buttery flesh. Found in warm, deep waters of the Atlantic and Pacific, it is sometimes called butterfish: the meat is silky, dense, and deeply satisfying.
Hot-smoked over hardwood until the skin turns golden and the interior firms to a velvety texture, this escolar delivers layers of flavour: clean smoke up front, a long savoury finish. Slice thin and serve at room temperature on rye bread, with pickled cucumbers, or with lemon and fresh dill.
A note on portion size: escolar is naturally very rich. A recommended serving is 100 to 150 g.
