What it is
Beer sausages are a classic Eastern European staple — short, plump links hot-smoked over hardwood until the skin blisters and the meat firms into a dense, juicy bite. The smoke penetrates deep, giving a rich mahogany colour and a bold flavour that stands up well to a cold lager or a dark ale.
Sold by approximate weight (±1.3 kg), these sausages work equally well on the grill, fried in a cast-iron pan or served at room temperature on a charcuterie board. Score the skin lightly before heating for extra crispness.
