What it is
Herring Under a Fur Coat — known in Russia as Shuba — is one of the most beloved dishes of the Eastern European table. Layers of lightly salted herring sit beneath a colourful sequence of boiled potato, carrot, onion and sweet beetroot, each layer bound with a touch of mayonnaise. The result is a beautifully vivid salad that is as satisfying to eat as it is to look at.
This is the Babushka Deli house version: prepared fresh in our kitchen using traditional proportions, with the beetroot on top giving its signature deep-crimson colour.
Serve chilled. Best enjoyed with rye bread or dark sourdough. Pairs well with a cold lager or a shot of vodka.
