What it is
Suluguni, the brined Georgian cow’s milk cheese, given a cold smoke. The outside takes on a warm amber crust; the inside stays the springy, milky white that pulls apart in long strings.
Pull off strands at the table, tear into khachapuri before baking, melt onto grilled bread, or chop into a salad with tomatoes, walnuts and herbs.
