What it is
Halva, the Eastern European way: finely ground sunflower seeds blended with a cooked sugar/invert-sugar syrup, foamed with a little soap-root extract, scented with vanilla. The texture is crumbly-stringy, dense, sweet, with a rich nutty taste from the seeds. Quite different from the dense Greek/Middle-Eastern sesame halva.
Eat in small pieces with strong black tea, slice into cubes for a sweet platter, crumble into yogurt or cold milk for an instant dessert, or melt a piece into hot porridge.
