What it is
A cooked-smoked beef servelat — a firm, finely textured sausage with a deep mahogany rind from gentle wood-smoking. Servelat sits between a salami and a saveloy: cured and emulsified for an even slice, then warm-smoked so the flavour stays mellow rather than sharply dry-cured.
Cut thin, the slices keep their shape on a board, melt slightly when warmed on rye toast, and carry the gentle savour of beef rounded with a hint of pepper and garlic.
